According to the manga, Jiren didn't want to join the tournament, even with the stakes of his universe being erased at play, until he learned the Super Dragon Balls would be the prize and they could grant any wish. Its said Jiren has one desire that he wants to see fulfilled, but what that is we don't know yet.
Most if not all of the universes are probably going to be wished back before all is said and done, regardless of outcome, I'd wager. U6 is definately coming back, considering how popular it is.

I've been told that Catalyst: A Rogue One Novel by James Luceno is a good read, but I can't confirm as I haven't read it. Journey to The Force Awakens: Lost Stars by Claudia Gray and Phil Noto has gotten some praise, from what I've heard. Again, can’t confirm.
I've only skimmed the Aftermath series at the bookstore. Seems like if you want to know the details of how Palpatine moved so much Imperial resources into the Unknown Regions to set up the First Order down the road without anyone really noticing, and the stuff that lead to the Battle at Jakku, you should give these a read, but if that doesn't really interest you, you can give them a pass and just read a summary on one of the SW wikis.
The other novels haven’t really earned my attention. They didn’t seem interesting or really relevant.
