Zacian.
The only thing that holds Cinderace back is that he's another fire-type starter and Incineroar and Charizard are already featured as full evolutions. Rillaboom is reasonably popular too - it's the Water one no one cares about - but he is visually rather similar to DK. He even comes with the drummer theme that DK has in his Final Smash.
On the other hand Cinderace has this football player theme that does not exist yet, the closest thing to an athlete is probably the Wii Fit Trainer. So I would absolutely bet on him.
Zacian could be interesting because thematically he would be (I think) the first 100% quadrupedal fighter. But there have been many comments already about these legendaries being the most unbalanced duo ever, so if they add Zacian without Zamazenta in Smash that could make people who own Shield and not Sword unhappy. Although they could also add them both as two stances of the same character.
Other dark horse picks for me would be popular Gen 8 common mons like Obstagoon or Toxtricity.

To this day I do not understand why they chose to add Byleth instead of Edelgard from Three Houses.
She actually has a personality. And an interesting backstory. And a fantastic VA.
She can be seen as a villain - like most characters in that game except for Byleth - and has a red and black color theme to go with it.
She has some spectacular alternate outfits.
She uses an axe.
Unlike Lucina, she is supposed to be slow but super tanky and powerful, which is rather rare for female characters.
But no, they chose the nondescript self-insert stone-faced mute, and one that has way less charisma than Link.
